As part of the Bondi Pavilion Restoration and Conservation Project, Waverley Council is seeking to appoint a vibrant mix of retail businesses to operate from the iconic building from when it reopens.

There will be a two-stage procurement process to appoint future tenants. Stage 1 will see a tender undertaken to appoint an experienced food and beverage operator for the large southern tenancy known as Shop 4. The tender opens on 14 July 2020 on the TenderLink website and closes on 12 August 2020.

Mayor of Waverley, Paula Masselos, said the tender presents an exciting opportunity for a unique food and beverage offering in one of Sydney’s most famous locations.

“We want to attract a provider who is used to operating in a heritage building and meets the diversity of the people who live in Bondi,” Mayor Masselos said.

On June 19, Waverley Council celebrated a major milestone in the Bondi Pavilion Restoration and Conservation Project, announcing that head contractor Buildcorp will commence building works in the coming days.

The heritage restoration will take around 18 months to complete and include:

  • New and improved amenities on the northern side of the Pavilion, including a family change room
  • Courtyard spaces will be landscaped and updated for multi-purpose use
  • Renovated community spaces
  • Renovated art gallery and theatre
  • A ‘Bondi Story Room’ which will be used as a flexible social history exhibition space
  • A community radio studio
  • New tourist centre/box office to the north of the entrance foyer
  • Renovated commercial spaces for hospitality and other services
  • A new Indigenous public artwork
  • A larger space for the Pottery Studio and a second kiln.

“The Pavilion is iconic. Bondi Beach is iconic. And this is an opportunity to have something really special down there,” Mayor Masselos said.

“They will need to cater to locals who are down for their morning exercise and want to grab a quick coffee, to people who have travelled to Bondi for a long lunch overlooking the famous beach, through to dinner and drinks at night.

“I’m sure we will have a lot of people interested in the tender and interested in contributing to the vibrancy of the dining scene in Bondi.

“We are so very proud to be retaining the Pavilion as a cultural and community hub for future generations with a major focus on sustainability. This is what the community asked for and we listened.”

The commercial space in the southern end comprises around 400 square-metres of internal space and around 400 square-metres of outdoor dining space, subject to development application approval.

Stage 2 of the procurement of retail commercial tenancies will see an expressions of interest process, followed by a public tender, to be undertaken later in the year, for the tenancies in the northern end  of the building.
